You will need:

1 ¾ cup heavy cream

1 ¼ cup whole milk

¾ cup of sugar

A pinch of salt

1 tbsp vanilla extract

Heat 1 cup of the cream in a saucepan but only to dissolve the sugar and salt. Add the remaining cream, vanilla extract, and milk, whisk lightly to combine, and put in the refrigerator to chill. Pour into your ice cream maker and start checking your dessert after 20 minutes. Enjoy!

Chocolate Mousse

You will need:

¾ cup of quality dark chocolate (min 70%)

½ cup espresso

1 ½ cup ready-made fresh custard

3 (large) egg whites

1 tbsp brown sugar

Cocoa powder for dusting (optional)


Combine and melt the roughly chopped chocolate, espresso, and custard. You can do it either in a microwave or in a pan placed over gentle heat. Transfer mixture into a mixing bowl and let it cool. In another bowl, beat the egg whites with a pinch of salt and the sugar to stiff peaks. Carefully add the beaten egg whites to your custard mixture, the aim is not to let all the air out.

Now, pour the mixture into 6 smaller ramekins and chill for at least 4 hours (overnight is just great). Dust with cocoa just before you are going to serve your lofty dessert.

You will need:

1 ¾ cup fresh strawberries, hulled and quartered

4 ready-made meringue nests broken into not very small pieces

1 ¼ cup double cream, lightly whipped


Take just a half of the strawberries and crush them to a rough pulp, use the back of a fork or a food processor. Put the meringue into a bowl and gently add the cream. Now add both the strawberry pulp and quarters and combine everything to make a gorgeous fusion of pink ripples and white.

Lemon Pudding

Another uncomplicated dessert that looks great and tastes superbly, it will take less than an hour to be ready to replenish your dinner or coffee time. It doesn’t require any particular culinary skills or knowledge and consists of ingredients that you always have in the kitchen.

You will need:

1/5 cup butter

1 cup golden caster sugar

1 lemon, zested

½ cup fresh lemon juice 100ml

3 eggs, separated

5 tbsp (heaped) plain flour

1 cup milk

1 tsp vanilla extract

Icing sugar for dusting

Double cream to serve (optional)


Heat the oven to 356°/Gas 4. Beat the butter, sugar, and lemon zest until they are pale and creamy, then mix in yolks (one by one), flour, milk, vanilla, and the lemon juice to get a smooth batter. Do not overbeat. In a separate bowl, whisk the egg whites until soft peaks and gently add them to the mixture.

Pour your mixture into a buttered ovenproof baking dish (a soufflé mold is an elegant option) and put it in a baking tray half-filled with hot water. Bake for 45 minutes until the light brown top and gooey velvety lemon curd in the middle. Serve hot with or without cream.
