After years of experiencing the Caribbean culture through family stories and delicious cooking, Byron, the founder of Jamaya, set off to explore more of the Jamaican culture in sunny Jamrock. Through experiencing true Jamaican culture first-hand, the food, the music, the people – Byron knew it was something extraordinary… and so with love for Jamaica and his daughter “Maya”, Jamaya was born!

JERK-TASTIC

Jamaya Chicken is special. The chefs combine authentic Jamaican culture, cooking techniques and flavours that pack-a-punch. The perfect blend of complex-seasonings, slow grilling and love results in mouthwatering, award-winning, tender jerk chicken.

First up, Jamaya take delivery of the tastiest and most succulent fresh chicken, each and every day. The juicy, fresh chicken begins its 24hr marination process, ensuring a secret Jamaya marinade and incredible spice mix soaks all the way through, giving the jerk chicken a deliciously rich and unique flavour.

Once the fresh chicken is packed full of flavour, it’s time to add some more oomph… the highly skilled Jamaya chefs fire up the grill and begin the cooking process – but this is no normal grill. At Jamaya, the team are all about flavour and true Jamaican authenticity. Chefs chargrill the chicken over pimento wood, giving it that distinctive, mouthwatering smoky taste, adding a second layer of flavour to the jerk chicken.

Jamaya’s original jerk basting is generously applied during the grilling process, locking in the moist and tender texture, and adding the third and final layer of the delicious, flavourful jerk chicken.
